Seasalt & Friends Chapter 11: An Evening Lit by Flame and Guided by the Sea

Seasalt continues its signature culinary series with Seasalt & Friends Chapter 11, in collaboration with WAATU. Set on the coastline of Seminyak, the event brings together two distinctive dining concepts through a shared focus on quality ingredients, modern techniques, and balanced flavours.

The collaboration reflects the connection between Seasalt’s coastal dining style and WAATU’s contemporary global approach to cooking. Built around seasonality and craftsmanship, the experience presents a refined yet approachable interpretation of modern seaside dining.

Guests are invited to enjoy a curated culinary journey through a four-course set menu alongside a selection of à la carte dishes. Each menu is designed to highlight precision, creativity, and depth of flavour while maintaining simplicity and balance.

The collaboration is led by Chef Lachland Budd of WAATU and Chef Hazwan Hamdan of Alila Seminyak. Together, they present a menu that combines their individual culinary perspectives in a seamless dining experience.

The menu begins with Beef Tartare, finished with kimchi salt for a subtle fermented depth. This is followed by Tuna Usuzukuri with bonito cream, radish, and sake, offering a delicate and clean flavour profile.

For the main course, BBQ Mahi Mahi is served with leeks, sake glaze, and wakame, combining gentle smokiness with coastal freshness. The experience concludes with Bali Cocoa, a dessert featuring coconut and salted milk caramel, creating a rich yet balanced finish using local ingredients.

In addition to the set menu, the à la carte selection highlights the creativity of both kitchens and offers guests a more personalised dining experience within Seasalt’s beachfront setting.

Set within the open-air atmosphere of Seasalt Seminyak, the collaboration captures the essence of coastal dining in Bali. Seasalt & Friends continues to provide a platform for culinary exchange, bringing together chefs and dining concepts that share a commitment to quality, technique, and innovation.

The Sunset Hour and Dinner experience will take place on 23 May 2026 from 5pm to 10pm. The four-course set menu is priced at IDR 800,000++ per person, with additional à la carte dishes available throughout the evening.
