Oliverra, the Mediterranean restaurant at Umana Bali, LXR Hotels & Resorts, has launched the Mixology Collective, a new dinner series celebrating the blend of fine dining and creative cocktails. For the first edition, Oliverra will host Taketo Utsunomiya, the talent behind NOTTE Uluwatu’s bar, for an exclusive six-course pairing dinner that combines flavour, craft, and storytelling.
As cocktails become more prominent in modern dining, this series brings together top chefs and bartenders from Bali and beyond, offering guests a fresh culinary experience. Each cocktail is created to complement, contrast, or elevate the paired dish, highlighting the connection between kitchen and bar.
“With Mixology Collective, we’re exploring a rhythm in our dining philosophy, where drink and food can move in tandem. Taketo’s refined, flavour-forward style allows us to discover unexpected harmonies and surprising contrasts, all in service of a deeper, more sensorial experience for our guests,” says Ngurah Putra, Executive Chef at Umana Bali.
The first dinner will be held on Friday, 7 November 2025 at 6pm, beginning with a Verde Gin & Tonic before a six-course menu unfolds. Highlights include:
• Oysters with a NIKKA Coffey Gin martini
• Scallop paired with a passionfruit, yuzu, and bamboo cocktail topped with wasabi salt
• Ravioli served with an Aperol and vermouth highball
• Coffee-smoked beef cheeks with smoky KOCH Mezcal and Bali’s LIMO liqueur
• A whiskey and Earl Grey tea cocktail to finish
Throughout the evening, guests will discover how cocktails can play a central role in each dish, enhancing the flavours and shaping the dining experience.
“Pairing cocktails with a tasting menu is like creating music where each course is a note, and the drinks are the rhythm. I wanted to craft cocktails that don’t just accompany the dishes but reveal new layers of flavor, making the journey more memorable,” says Taketo Utsunomiya, Head Bartender of NOTTE Uluwatu.
Dinner is priced at IDR 1,700,000++ per person (food only). Guests can enjoy the full cocktail pairing, including aperitivo, dinner, and curated cocktails, for an additional IDR 800,000++.
