This July, COPA at 25hours Hotel Jakarta will partner with Santanera Bali for a two-night culinary collaboration celebrating the rich flavours and traditions of Latin America. Taking place on 17–18 July 2026, the event will bring together Chef Andrés Becerra of Santanera Bali and Chef Matias Mardones of COPA for a dining experience centred around fire, smoke, bold flavours, and shared hospitality.
Rather than a traditional guest chef takeover, the collaboration highlights the meeting of two Latin American chefs who have built their culinary careers in Indonesia. Originally from Colombia and Chile, Andrés and Matias have worked across several countries before settling in Indonesia. Their cooking reflects both their Latin American heritage and the influence of international experience combined with local ingredients.
Known as one of Canggu’s leading dining destinations, Santanera Bali is recognised for its ingredient-led approach and vibrant atmosphere under the direction of Chef Andrés Becerra. His culinary journey through Bogotá, Melbourne, Copenhagen, and Bali has shaped a style that combines Latin American techniques with Indonesian produce.

At COPA, Chef Matias Mardones brings experience from Hong Kong, Manila, Macau, and Korea. His cooking focuses on bold flavours, charcoal grilling, and dishes designed to be shared in a lively dining setting.
Fire is at the heart of the collaboration, reflecting a defining element of Latin American cuisine and a shared philosophy between both restaurants. The specially curated menu features charcoal and wood-fired cooking alongside fermentation, native ingredients, and Indonesian produce.
Signature dishes include the Scallop Toston, combining French scallops with Indonesian sambal hijau on a traditional toston; the Torta Ahogada, a modern interpretation of the classic Mexican sandwich with red snapper, pickled cabbage, and prawn habanero bisque; and the Wood-Fired Quail, stuffed and finished in COPA’s wood-fired oven with mushrooms and black mole.
Together, the chefs present a menu that celebrates Latin American traditions while embracing the flavours and ingredients of Indonesia.
“Both COPA and Santanera share a similar way of approaching food,” says Chef Matias Mardones. “It’s flavour-driven, relaxed, and built around bringing people together around the table.”

The collaboration will take place at COPA, the Latin American restaurant at 25hours Hotel Jakarta, known for its charcoal-grilled dishes, colourful interiors, and vibrant dining atmosphere in the heart of SCBD.
COPA x Santanera Bali will be held on Friday and Saturday, 17–18 July 2026, from 6.00 pm to 10.00 pm.
As an exclusive Accor Plus benefit, members will enjoy 15% off dining during the collaboration. The offer applies to one dining bill per member, per visit, and cannot be combined with other promotions or discounts.
