COPA at 25hours Hotel Jakarta partners with KAUM Bali for a special culinary collaboration celebrating Indonesia’s rich food heritage. Taking place from 7–9 August 2026, the event brings together Chef Maxie Millian of KAUM Bali and Chef Matias Mardones of COPA to present Indonesian flavours through open-fire cooking and contemporary techniques.
The collaboration explores how traditional Indonesian recipes can be reimagined while staying true to their roots. Chef Maxie’s expertise in regional Indonesian cuisine complements Chef Matias’ international experience and passion for cooking over fire, creating a menu inspired by heritage and innovation.
Guests can enjoy a selection of dishes prepared with Indonesian ingredients using charcoal grilling, wood fire and traditional cooking methods. The experience also includes a cocktail takeover at Oddbird Bar, featuring cocktails inspired by Indonesian flavours and local ingredients.
“Food becomes more interesting when different perspectives come together,” says Chef Matias Mardones. “KAUM has spent years preserving Indonesia’s culinary stories, while at COPA we naturally cook over fire and celebrate sharing. Bringing those ideas together felt like the right conversation to have.”
The collaboration will take place at COPA and Oddbird Bar at 25hours Hotel Jakarta from 7–9 August 2026. Accor Plus members will receive 15% off dining during the event, valid for one dining bill per member, per visit, and not in conjunction with other promotions.
