For only two days in October, COMO Uma Canggu and MODENA Culinaria are collaborating on COMO Journey: Taste of the Land! Scheduled for the 16th & 17th October 2025, this event will present a tasteful celebration of World Food Day with dialogues on food security, live culinary showdowns, and a refined 6-course dinner.
With Bali’s natural produce as the highlight, COMO and MODENA are combining the philosophy of mindful living and innovation to build a fairer, sustainable future. They’re bringing the gastronomic story to life, gathering chefs, advocates, and industry leaders to inspire reflection and action toward conscious dining.
Henry Scott, General Manager of COMO Uma Canggu, says, “Taste of the Land is an expression of COMO’s philosophy – that food is nourishment, connection and change. Through the COMO Conversation, the chef battle, and the collaborative dinner, we aim to highlight how dialogue, creativity, and sustainability can come together to make dining not just pleasurable, but purposeful.”

The Mystery Box Chef Battle Challenge
This lively face-off at COMO Beach Club will feed your curiosity about the new era of conscious cooking!
Colin McSherry, Executive Chef of COMO Uma Canggu and Chef Ami, MODENA Culinaria’s Resident Chef and Runner-Up of MasterChef Indonesia Season 10, are harnessing craftsmanship and resourcefulness to turn a mystery reef fish into authentic Balinese dishes.
Colin McSherry, Executive Chef, COMO Uma Canggu, directs the kitchen with an ethos of balance, authenticity and sustainability. He takes Bali’s seasonal ingredients and ocean-fresh seafood and reinterprets them with a modern approach, embodying COMO’s mindful, wellness-driven gastronomy.

He shares, “The mystery box challenge and our collaborative dinner reflect what modern cooking should be – inventive, responsible and deeply connected to place. For me, it’s about creating something meaningful from what the land and sea provide, respecting every ingredient, and letting flavour tell the story.”
Meanwhile, Chef Anggit Dwi Fahmi “Ami” Prachaya Ruangroj, known as the charismatic runner-up of MasterChef Indonesia Season 10, sprinkles creativity, humour, and precision to his creations. As Resident Chef of MODENA Culinaria, he leads cooking classes, pop-up experiences and culinary showcases wrapped with storytelling. He champions the artistry of zero-waste cooking, turning limitation into innovation.
Watch them showcase a zero-waste approach with the help of MODENA’s induction and convection power tools.
COMO Conversation: Nourishing Beyond the Kitchen
Following the culinary showdown, COMO Penthouse will host Nourishing Beyond the Kitchen in the afternoon, a fireside chat taking on food security, the most pressing global issues of our time.
Sandra Pramitha, Outreach Officer of Scholars of Sustenance (SOS), will moderate the session, alongside a panel of leaders in advocacy, innovation and hospitality. The speakers include Vania Herlambang, Sustainability Advocate and Puteri Indonesia Lingkungan 2018; Winda Aulia, Sustainability Lead at MODENA; and Lelie Liana, Cluster Sustainability Manager for COMO Hotels and Resorts in Bali.
The session will explore how cross-sector collaboration can make safe, nutritious and culturally meaningful food a universal right, rather than a privilege.

Four-Hand Dinner: Taste Without Borders – A Zero-Waste Celebration of Land and Sea
The celebration wraps up with a stunning four-hand dinner at COMO Beach Club, led by Chef Ami, Resident Chef of MODENA Culinaria and mastermind of MODENA’s culinary direction. Chef Ami will present Jumpa Jampi, Wirangi, and Ramoe Mantra, signature desserts designed by Chef Bella, Pastry Chef of MODENA Culinaria. Each dish is a storytelling device, reflecting a deep respect for Indonesian flavours. Chef Colin’s globally-inspired creations, including crab and squid ink linguine, fish Bouillabaisse, and grilled mackerel with tartar, cucumbers, chard bone and shiso dressing, will complete the irresistible presentation.
Chef Ami, Resident Chef of MODENA Culinaria, adds, “Cooking, to me, is a dialogue between tradition and innovation. This collaboration with COMO is about harmony – two chefs, two perspectives, one shared respect for ingredients and sustainability. Every dish we create tells a story of culture, creativity and care.”
During this experience, guests will receive a story card for every course, guiding them through a celebration of Bali’s land and sea, its cultural heritage, and the shared values of innovation and sustainability.
