The Wagyu Beef Rendang showcases 72-hour sous-vide wagyu with coconut serundeng, coconut cream, and a hint of chilli for a rich and balanced flavour. The Tuna Collar Rica-Rica draws inspiration from Eastern Indonesia, pairing tender tuna with dabu-dabu and bold spices for a vibrant, aromatic dish. Meanwhile, the Duck Leg Confit with Sambal Madura combines slow-cooked duck with sambal ireng, pickled cucumber, and baby carrots, offering layers of spice, acidity, and subtle sweetness.
Led by Chef de Cuisine Yopi Tumeru, the culinary direction reflects a balance of heritage and modern technique. With nearly a decade of experience in luxury hospitality and F&B, he brings a fresh yet respectful approach to Indonesian cuisine.
